Only know a few that I ran across accidentally that I don't think are documented by apple (although being an engineer I never read the manual :) ). FAVs are:
Capture any screen. Just press the round program close button while pressing the upper right power button. Screen is now in your photos section.
Quick ' key...just hold down the , key.
Any others?

Tap the clock on the top of the screen to quickly scroll up to the top of any page.

Couple other things that weren't in the early iPhone manuals (might be now).
1) if you are typing in the alpha keyboard and want just one number or punctuation, press the .?123 and then slide your finger to the symbol you want and let up...returns you to alpha keyboard.
2) don't need the www. or .com parts when going to a www site in safari.
3) press and hold down on a link if you want to see the actual web address it is going to take you to.

Press and hold on a picture in safari and you can copy or save the image. great way of getting pics on your phone without a computer or emailing them
