It depends what you want it for. For example if
You are going to be grating cheese, you probably want parmigiano reggiano or an asiago. If you are just going to be eating cheese you probably want a type of brebis. It really depends on what you are looking for though.

REALY ripe mountain Gorgonzola. So ripe its creamy, super strong and makes the fridge smell like a sewer... That and a nice glass of red wine.
