Depends on the genre of music I think. Zakk Wylde is a beast on the guitar. Look up Black Label Society if you never heard of him.
As far as blues/rock guitarists go I do like me some Kenny wayne shepherd too

I'm sure no one has heard of him, but Spencer Seim from the band Hella. Not everyone's thing and totally unconventional, but so awesome!
