Glasses won't work cuz there are still the unprotected areas around the lenses. If u go that route, gotta use goggles that seal around the entire eye. If u use a really sharp knife and work relatively fast it's usually not so bad.

little diced red onion, little celery, and... DICED SWEET BABY GERKINS. or substitute a little sweet pickle relish. also, never underestimate the tastiness of miracle whip.

glasses and contact lenses are extremely helpful here.prior to having to do a lot of chopping, peel the onions and leave them in an airtight container for a couple hours (up to a couple days.). onions already partially prepped and cold help me not tear up like a little bitch watching the notebook while working with badass amigos in the kitchen. the ones who will mock and stab you if they see you fuckin crying, even involuntarily.

best bacon... it's all about the quality of the product you buy. go for the thickest cut, hardwood smoked stuff you can find.
don't cook this shit in a pan on the stove unless you want to destroy it with hate. you'll get burnt parts or squabbley parts.
lay it on a baking sheet at maybe 400• and check it every 5 min til it's done to your liking, flipping it once. you'll get flat even deliciously rendered pork fantasy. -
ALWAYS USE A REDICULOUSLY SHARP KNIFE.
if you cut yourself, it will be clean. but you're less likely to fuck up and hurt yourself if you're not hacking at shit with a dull blade.
get one decent knife, not those plasticey garbage knives. get it sharpened professionally if you don't have a whetstone. and no, those honing steels don't give a blade a true edge.

What brand of knife would you recomend for moderate to high home use? I had a wustoff at one time but someone ruined it. Now my best knife is a henkels international classic but I'm not really a fan of it. What should I get?
