I can only bitch online because I can't bitch in real life. I got soft. spent a bunch of months not cooking. man, the kitchen has kicked my ass. it's so easy to forget the pain and physicality of opening a restaurant. what it's like to haul two and a half 50 lb bags from the Bowery because you can't hail a cab. hoisting a case of 20 fucking chickens up NYC basement steps. that's like carrying a drunk girl, only one that leaks salmonella on your jacket. the mandolin bit my add ass and i'm covered in nicks and bruises. 45 hours in 3 days. 75 hour week and another service to go. arghhhhh matey. a pirates life for me!

there is no lunch break. I squeeze in smoke breaks where I squat on the sidewalk. if you sit down, it's hard to get up. 12 quarts of root vegetable brunoise. dry storage is shaping up nicely. this has been ongoing for two weeks. enough of my bitching. I love my life. now to find an apartment to live in...

I survived the first weeks. time to go look for rooms to rent in brooklyn. really hard to apt hunt between the hours of 1am and 6am.
my knife skills are still good. brunoised 12 quarts of picturesque root veg for corned beef hash. but I'm also covered in so many cuts from stupid shit. like stainless steel scrubbies and edges of new hotel pans.
