I've got the Nikon D5000, has a great range of lenses and is well priced. There is a new model out now aswell which is the D5100. Great piece of kit and the results are amazing even if you are a novice! And just to let you know Craic, the Nikon range does take RAW.

I own the cannon T2i and love it. The T3i has a few new features most notably is the flip out screen. I got mine for video. Highly recommend it.

AF points... You only need one. Any model will do.
A used Canon 40D with a 35 f/2 is quite economical to start with, and produces excellent results. Swap out the focus screen for precision manual focus.
Nail the sucker down on manual for a few months, and use the "zone system" for metering. (Like Ansel Adams taught, except concentrate on the highlight end)
Once you get that, the rest is your eye.

My brother has EOS REBEL t2i and it is great. Get t2i or t3i!
