Personally Age Of Mythology is my favorite RTS if you're into those, I like being able to customize my army based on God choice.

I loved civilisation 3 when they discover railways. The steady conversion of road to rail was fascinating.

In sim city, spending ages building a thriving city then seeing how quickly you can lay waste to it by causing disaster after disaster.
