Eating chips from Maria's Taco Shop and I just got one of those that's a little thicker than normal and flaky crispy. I find these every once in a while and wonder how they happen. You know what I'm talking about?

and those really are extra delicious. although every tortillaria is a little bit different. the one that used to be down the street from me in Brooklyn, their chips always fried up a little thicker and flakier yet also smoother on the surface.
