um, clean them, dry them. wrap in chix towel or similar. wrap in plastic. wrap in more plastic. put in fish box. close lid. I don't salt them or sprite them.
you could always try to salt and dry the fuckers like bacalao. I've never had fresh paddlefish. their unborn babies are tasty. also sold as "American sturgeon." I like caviar.
-
Don't know much about that particular catch but I usually just clean em and freeze em. I got a buddy who swears that a shot or two of bourbon mixed with some water works well before you freeze but I've never tried it.

Jake. I might try dat. Shot or 2 of Bourbon in the bag. Interesting idea. Does sound better than salt. ✌Don't know much about that particular catch but I usually just clean em and freeze em. paddlefish are kind of overfished species. particularly for their roe.
I'm no master angler but I have caught fish and have frozen them at home. I would break down large fish into useable loins first though. and wrapping them in parchment or wax instead of a chix towel, will help them from getting burned.

I have friend whose life is fishing he freezes them in water in ziplock bags. I've had fish from him that is years old and it taste like it's fresh.

Just vacuum seal and freeze. Good for about 3 months.

Never heard bout the sprite trick? If ur freezing isn't salting them just an option? I like what mama said and try and dry them out, like a fish jerky.4 all the Anglers. Hmmm. So this bourbon thing has me thinking.
Add some simple Beam on the fish, then vacuum seal. Should suck that bourbon right into the meat of the fish.
I'm going to try this with some walleye or catfish. Heck, may even do some good with some pan fish, though I usually don't keep them long. -
