Grandma Naomi's Brisket Recipe---
5 lbs beef brisket or corned beef
Baby carrots
Onion (large dice)
Celery (chopped)
potatoes, thin skinned like red bliss or baby Yukon golds (halved or quartered based on their size)
Heinz Chili Sauce (two bottles)
Dry Vermouth (enough to fill both chili sauce bottles.
vegetable oil
salt
pepper- heavy bottom pot large enough to hold brisket and veg.
- tongs
- 4 to 5 hours. -
preheat oven to 300•F
• season both sides of brisket with kosher salt and pepper (enough to see) and set aside.
• get pot good and hot. coat bottom with vegetable oil.
• sear all both sides and edges of the brisket making sure the fat gets nice and crispy, being careful turning it in the hot oil.
• while brisket is searing, chop the veggies. set potatoes aside in cold water so they don't discolor.
• once brisket is seared, pull out, set aside and drain out excess oil from pan.
ttoss in carrots, celery and onions quick rolling around so coated with residual bits from browning the meat.
• lay seared brisket on top, fat side up.
• pour on top: two bottles of chili sauce. then fill up those bottles with vermouth. shake. dump vermouth on top of chili sauce on top of brisket. -
cover tightly with foil or lid. center rack oven for a good two hours. then baste, add potatoes, leave in oven covered for another hour or so, turn up heat to 350 and uncover. nestle brisket so the fat is just poking out the top and can crisp up. cook for another hour or so until meat is tender and the house smells awesome.
let the brisket rest for ten minutes before attempting to hack into it. enjoy your one pot dinner that cooks itself.(you can sear and set up the roast the night before. and put in 225• oven in the morning and it would be ready by dinner.)

or cook it overnight, let it hang out in fridge and reheat that evening. flavor is best 48 hours after cooking so the more leftovers, the better.

super cheap and often readily available. and it takes about 10 minutes to get it in the pot. the trick is wrangling up the time to let it ride low and slow. my grandma used to fuck the veg and just do the meat and the chili sauce/vermouth in a Pyrex glass. this was my improvisation to dirty less pans and get a complete meal in a pot.
