Chiquitos good Mexican restaurant chain. Grab and go concepts have to be just that. The main first consideration has to be does the food suit that style of service. My first thought would be to develop a trial menu to see if the timings would work. I think they probably would as Mexican dishes are very similar. If the food can be cooked quick enough and held sounds good. Also consider how the menu would work at the quietest times of day.

I turned to my father for advice when I was ready since he owned his business for awhile and I trust him. It was very warming? Or atleast calming to me

Due to spending cuts ppl are getting more take away food rather than sit down restraunts. I would have thought. Also one thing I remember from working in a fast food place a few moons ago January is the worst time it's so quiet, so maybe not set up then.
But take it all into consideration -
Thought of a francise? There is a great Aussie company called zambreos, look it up champ quality food and they even help third world countries, bit of extra publicity. Gl!
