Use google sync. It backups your contacts real time. Restore your iPod and enter your google info and all your contacts are back. And it's free

How you gonna trust google with contacts. You already have windows contacts that does the same if you have a windows pc

Sync your device then restore it. Of course choose the latest sync when restoring. This will automaticly un-jb your device.
