who are they what do they do and how do I get me some???

they're basically an extra mob member. you can either buy them with don points, or loot them in cbs (crack a bank safe) but the chance to loot them is very rare.

and the last i know you can only have 75% hench in your mob. i.e. if you have 100 mob 75 of them can be hench.

No, wrong math. You can acquire hench totalling up to 75% of your real mob, so if you have 100 real mob, you can acquire up to 75 additional hench for a total of 175.
