They count as weapons towards capturing turf, yes.

Yes. I forget the bonus. Don't forget to save before you try to use them. If you flatten a turf first and then equip them you'll save rounds that you didn't need to use to flatten the turf. Will work as long as your opponent isn't healing.

It's 10% boost, helps on defense too if equipped. But, most will not have them equipped for defense.

Ammo don't work on your defence they are offence weapons only.

According to the loot list on the help page, yes it does add 10% to attack/defense
