Heard the term "sniping" a lot...what is it? Why does it work better with a smaller mob?

Also known as ranging. Player with a small mob can capture a larger mobbed player at a greater distance than the big guy can cap the little guy.

But wouldn't the larger player use more mob in the defense making the smaller mobbed player lose?

In a nutshell:

Big mob = short capping range.
Small mob = Long capping range.

Big mob + little mob (in vendetta) = big mob + long range.

Well it's the big guy that has a large captured radius around him. Little guy just has a smaller radius of capture. Kind of the other way around from your explanation.
