Make sure you buy quality meat, a good marbling of fat in the meat is key to a juicy steak, if it's too lean it will be dry and tasteless. And yes resting your steak is very important, try a dob of butter on top while it rests, it soaks through the meat basting it. Salubrious!

Nirvana, I'm actually on a bit of a health kick and the steaks I use are flank steaks, very lean cuts of meat, especially if I buy buffalo. As long as its not over cooked (2/3 the time of a regular steak) it tastes just fine. Nothing better than a diet that requires you to eat red meat :)
