Entire Halo series. ODST was the only meh one, but the subtle music works well when you're rookie. Madden 07 also had a good soundtrack IMO.

My absolute favorite game music comes from the Monkey Island series. I even have the main theme as a ringtone on my phone. (the only other ringtone I use is the main theme from the 1980's Masters of the Universe cartoon)

Prolly gonna go with Alan Wake. Really well done, and often overlooked. That whole game was brilliant. I'd also go with Mass Effect 1 and 2 OSTs, plus Explore 7 from FO3.
