AC/DC and many other bands/recording studios have made the decision to not put their music on iTunes. Lead singer of AC/DC called the whole program a monster, and Paul McCartney only recently changed his mind on the topic.
Def Leppard has found itself in an odd situation. The band wants to offer its music over iTunes, but the record company doesnt. An odd solution, the band is now forging their own songs and posting themselves on iTunes as a cover band.
I personally dont see the reasoning in business terms. Allowing people to buy songs rather than CDs quite obviously is a pro. If anyone understands, Please explain.
Also what iTunes hold outs do you wish changed their mind? -
Ac/dc still sell a fuck load of cd's. It was a shrewd move to not go on iTunes for them with the last album I particular. How many artists on iTunes do double platinum albums? Apple didn't innovate everything, the commercial music industry predates iTunes, don't cha know.

Apple is one of the greediest companies on the planet. They take a sizable chunk from every iTunes sale. The record companies do not always appreciate the lost revenue and would rather sell through more economical vendors.
