Forget the man made islands, the beaches and the posh hotels.
Head north from the airport and check out the giant 乃 -
Just make sure Tom Cruise isn't there.

There is TONS to do there, I stayed across the street from the Burj Dubai (was still under construction). I would say rent a car if you already have an international driver's license. If not, it's prolly not worth it- you can get a cab easily as you would in NYC, plus traffic can be absolutely horrible and the cab drivers would know all the short cuts that you wouldn't. Also, because it's so flat and hot it makes it hard to see when there is a backup ahead of you, so you will have to slam your brakes often, so if you do get a rental get the insurance. Don't drive to the Gold Souk, the streets are narrow and there's never parking. If you want to go to the mall often or visit Abu Dubai you will need a car- the mall is kinda far, and Abu Dubai is way too far for cab fare. Also, the public transit was not built yet (I think it was a monorail I forget now) but it might be up by now.

The Jumeirah Palm Island was nice, but there is nothing there but empty houses. The hotels were all under construction when I was there. Good to see, but nothing to do.
ABSOLUTE MUST DO- go on a dessert tour, they take you off-roading over the sand dunes, depending on who's in the car they will do some extreme stuff. The tour I did was over-night, after spending all day off-roading they took us to a camp site where we met up with other tours, there was a cook out with belly dancers and camel rides, then they took us off to a small camp site where we pitched tents for the night.

Stuff to do-
-The huge mall, you'll need at least 2 days to see it all and you can go skiing inside, also hang out by the valet if you want to see some exotic and rare cars
- Got to a Camel Racing
- See the Burj Dubai (don't know if it's open yet)
- See the Dubai Stock Exchange (really nice building)
- See the Burj Al Arab (it costs a little over $100 to go inside if you don't have a room)
- Shop at the Gold Souk (low prices on high quality gold, and then lots of cheap stuff like canal street in NYC, but be careful they will take advantage of tourists- you can haggle with the prices)
- Check out the various beaches
- See a couple mosques
- If you're into it you can race cars at Autodrome- you use their Audi R8, Audi TT, Subaru wrxSTI, or F1 car
- Dierra Creek is a neat place
- The business are split up into free trade zones by genre so if you're into tech check out Internet City -
***Whatever you do- do not ask a cab driver to take you to a good night club! They will take you to one of the many places where it's 99% prostitutes.
***Before you go, if you don't have a phone with a SIM card get one and buy a temporary SIM card there for cheap. The cards/minutes are cheap, but even an old-school phone there is like $200
...but yeah overall, everything is spread out so get a map and plan your days out so you take fewer cab rides or only pay for parking once.

I've been a couple of times. I agree with don piff, definately do the whole desert safari thing, it's brilliant.
Also factor in an extra hour at the airport on your way home. There are duty free bargains aplenty...buy your Missus some jewellery -
And go to a shisha bar

The longer responses here are good...I go to Dubai about 3-4 times a year, and agree with most of what's been said.
My favorite Dubai tourist activity was a camel desert tour. The offload vehicle tour in the desert made me a but carsick, but the camels were awesome.
The malls really are impressive, and the food is great. The Atlantis has a super buffer, but many of the better hotels do.
Dubai is HOT this time of year. Be prepared for 100 F most days. Air conditioning and water are your friends!
The comments about PDAs are true...you would NEVER hold hands with a woman, but it's ok to hold hands with a guy (and no, not because they are gay, that's illegal). Personally, I don't, but you will see it a lot.
