Let's say I capture a turf is it better to repair it and keep it? or to tear it down? And get the money

Keep it... It heals itself. Also you make more if you lay a new turf on top of it, and tax it's income.

Capping turf and keeping them can put you over your Turf Limit, at which point you cant plant any new turf of your own. It just depends on your situation and what you wanna do.
