How should i choose who to fight to get the most experience points? I dont care to take peoples money i just want to level up quicker.

People with mob closer to yours.

How are the points worked out. Sometimes I attack a guys with more mob and influence but get 0points when I win the fight

There's more top it than just mob number. Look at the way they are armed. The closer your attack rating is to their defense rating, the more points you get.
