So I've finally managed to find areas where the local capo has way less inf than me so I've put some turf there - but why has that not made me capo of that area?

Sometimes it takes a while to update. If it doesn't update, then you probably don't have enough influence. Go to Home -> Top Mobsters -> Influence and find the place you want to become capo of, then check how much more inf you need.

You have to have more influence in that particular area than the current capo, not more influence in total. You might already know that but I couldn't tell from your question. :)

Ha ha thanks for the answer though! It's hard to make the questions clear when I'm not too sure what I'm asking yet! Still quite new and trying to get to grips with the game
