what do airports do? I know there is a lot of talk about them but how do they help?

Placing turf at a supported TW airport allows you to "fly" to other Connecting TW airports. You get a new ticket and can "fly" every two weeks. Click "airports" on the profile screen.

They don't really. Most of the leaderboard have blacked them out completely.

I stand corrected? Apparently all u have to do is ask. In which case, once u plant turf on the yellow part of an airport, you can then plant turf at another airport and hop from there.
