i know all about that i have to ask other players to "sacrafice" a turf to me, but how does the turf "trade" proccess work?

If they agree, they will destroy a turf to make room. Not all airports are closed however.

There's a few airports where someone completely dominated the airport with ALL of their turf, making it impossible to plant turf there. I don't think that's right or fair.

It's to stop there enemy's flying in to the location. Unfair yes, but done for a reason.
